Damascan rose petal preserve, commonly known as gulkand in South Asia or rose jam, is highly regarded for its sweet, floral flavor and its traditional use as a cooling tonic in Ayurvedic medicine. It is made by macerating Damascus rose petals with sugar and, in some traditional methods, sun-drying them to create a thick, aromatic paste.
